This seemingly benign flower has the power to kick cancer to the curb. Cauliflower is under investigation for its chemopreventive effects. Scientists at the University of Urbino claim to have found the naturally occurring chemicals in cauliflower, which have a chemopreventive effect and assist in the fight against cancer.
In their June issue of The Journal of Nutrition, scientists say they tested cauliflower and all varieties possessed a unique compound which suppresses cell proliferation. "Cell growth inhibition was accompanied by significant cell death, at the higher juice concentrations," they reported.
Women who eat cauliflower and other members of the brassica family (which includes broccoli, cabbage, brussels sprouts, kale, beets, turnips, and other cruciferous vegetables), could provide their bodies with the powerful tools it needs to fight breast cancer. The chemopreventive and anti-carcinogenic compounds show startling findings in research laboratories. Studies suggest that unlike broccoli, which targets prostate and bladder cancer, cauliflower targets cancerous growths in the breast tissue of mammals.
An Italian study investigated the anti-proliferative activity of a juice made from cauliflower and obtained from the leaves. This study was conducted on both estrogen receptor positive and negative breast cancer cells. The effect was on DNA synthesis and cell related proteins. The juice caused a marked reduction in the DNA synthesis even at low concentrations. Significant cancer cell death was noted at higher concentrations, although the effects are not lasting, in that they do not program the cells to die after the chemical compounds have been removed or used.
"These results suggest that the edible part of Brassica oleracea contains substances that can markedly inhibit the growth of both ER+ and ER- human breast cancer cells, although through different mechanisms. These results also suggest that the widely available cruciferous vegetables are potential chemopreventive agents," conclude the researchers.

The protective effects of cauliflower are negated when any type of heat or cooking is applied. The only methods of preparation are raw juice, freeze drying, flash freezing, and blanching or slightly steaming. The anti-cancer enzymes are rendered useless by hot temperatures and cooking.
